Royal Ube Crinkles

These Filipino cookies, cracked on the outside and soft like a brownie on the inside, will become the stars of your tea break.

 

The Express Recipe (20 cookies)

Ingredients:

  • The secret: 2 tbsp (or more for the foodies) of Purpelita Royal Ube Powder

  • 200g flour & 1 tsp baking powder

  • 150g sugar & 60g melted butter

  • 2 eggs & 1 tsp vanilla

  • Icing sugar (for coating)

Preparation (5 min + resting time):

  • Mix: Whisk the butter and sugar. Add the eggs, vanilla, then the flour, baking powder, and your Purpelita powder.

  • Rest: Let the dough firm up in the fridge for 1 hour.

  • Shape: Form balls, roll them generously in icing sugar.

  • Bake: Place on a baking sheet and bake for 10-12 min at 180°C.
